Semillon Sauvignon Blanc

Semillon Sauvignon Blanc

This delicate blend of Hunter Valley Semillon and Adelaide Hills Sauvignon Blanc reflects our commitment to taking the grape variety from the region it best performs in. Fresh, clean, crisp citrus, lemon and lime soars with the herbal and heady gooseberry goodness of the sauvignon blanc. It’s sweet and zesty, balanced and structured, helped along the way by being harvested in the cool of night, before being clarified and fermented with an aromatic strain of yeast to allow both grape varieties to fully blossom in the bottle. Try with fresh Sydney Rock oysters, tandoori pork, a tangy green papaya salad or an angular goats cheese.

Verdelho

Spring Rock Verdelho

Pineapple, passionfruit, guava and citrus shout summer’s arrival and we think we’ve got the season in a glass. Our full-bodied, tangy Verdelho reinforces the aromatics before finishing with a refreshingly crisp, citrus note. Sourced from our premium Hunter Valley vineyards, this is a wine of outstanding quality and consistency. We’ve harvested the grapes at night to keep the fruit cool, immediately pressed and clarified the juice and then fermented with an aromatic strain of yeast to retain the true nature of this joyous grape. A wonderful foil for summery meals from Vietnamese spring rolls to Scallops Choo Chee and Chilli Crab – or just by itself.

Chardonnay

Cowra Chardonnay

Our Chardonnay sings of life. First there’s just a waft of white peach and nectarine, then a little quince, reinforced by just a hint of French oak. The wine has a rich mid-palate, deftly balancing the peach and nectarine characters of the free-run juice with the subtle yeasty barrel-ferment characters. Harvested in the cool of night from selected vineyards in Cowra, these cool climate fruit are crushed and pressed in Cowra before their journey to our Hunter Valley wine where the juice is clarified prior to fermentation to capture the intense fruit aromas and flavours of cool climate chardonnay.

Merlot

Merlot

This full bodied, voluptuous wine blends plum and chocolate with cigar box characters in a complex but smooth blend. The fruit is sourced from our famous Hunter Valley vineyard, renowned for it’s distinctive regional characteristics of mulberry and plum. The grapes are harvested at perfect ripeness, with just the right balance of sugar, acid and flavour. After 48 hours of cold soaking followed by warm fermentation, the fruit is transferred to oak to develop its luscious rich flavours. A perfect wine for steak, coq au vin or dark chocolate!

Cabernet Merlot

This well-balanced, curvaceous wine blends rich berry fruit and chocolate, tannin and cigar box characters in a long, lingering luscious blend. Sourced from South Australia’s Limestone Coast, famous for full-bodied reds, the merlot and cabernet sauvignon grapes are picked at their optimum ripeness. After ten months of quiet maturation in selected French and American barriques the complexities of both varieties are perfectly highlighted. A great food wine for everything from pizza to roast beef, particularly when the mercury is dropping!

Shiraz

Shiraz

A big, bold, beautiful wine with rich, ripe spicy plums and blackberry balanced by soft, gentle vanilla and caramel roundness which proudly advances the reputation of Australian Shiraz. The fruit, which is sourced from our Hunter Valley vineyards, is treated individually, fermented and matured and then transformed into an intensely scarlet drop with aromas of spice, pepper, cinnamon, plum and berries. Devine with roast duck, smokey bbq’d ribs, and wood-fired pizza as well as cheddar.
