Cool climate fruit from the Adelaide Hills were used in the making of this Pinot Noir. The grapes were harvested at night, crushed, and de-stemmed where the fruit was cold soaked before fermentation. The wine was minimalistically handled, ensuring it retained the intense fruit aromas and flavours typical of cool climate Pinot Noir. Maturation in stainless steel and oak barrels for 12 months delivers a wine packed with cherry and red berry flavours complemented by subtle spicy oak characters.
The vibrant cherry-like fruit flavours extend onto the palate, complemented by the toasted French oak influence creating a mid-palate weight that is not only fresh and bright, but has wonderfully firm tannin structure and persistent length.
Lifted red berry fruit aromas of raspberries and cherries combine with subtle hints of oak spice and toast.
