Fruit characters are ripe with balanced alcohol due to our vineyards fortuitous low cropping levels. Post machine harvest and journey to our Hunter Valley winery the fruit was crushed, destemmed and chilled into potter fermenters and then allowed to warm up for three days before being inoculated with an isolated Rhone yeast strain.
