The first release of a Hunter Valley Shiraz from the Tempus Two 2014 stables. A year that produced a vintage that carries the whispers of; “the best since ’65”. Harvested from Oldman Vineyard, Upper Hunter Valley in the cool of night then crushed and de-stemmed immediately. The fruit experienced a 7 day cold soak before being inoculated with selected Rhone yeasts. It was pressed off and underwent malolactic fermentation in stainless steel tanks where it stayed for 9 months. The wine was transferred to new 1 year old French barrels for a further 3 months finishing before being lightly fined, filtered and sent to bottle
