Adopting a minimal intervention approach with winemaking this wine was crushed, destemmed and immediately clarified. It was then transferred to stainless steel tanks for fermentation to preserve the freshness of the fruit. Bottled early to capture the intense aromatics and pure varietal characters of green apple, pear and citrus.
