Overview

The vines that this fruit is sourced from is grown on the common VSP trellis system. Ansonica (also known as Inzolia) is native to Sicily, grown also in central and southern Italy, and is considered an alternative variety here in Australia.

The variety was chosen for this site as it is similar to the climate of where is originated giving it the ability to adapt to the hot dry conditions. The fruit was picked and delivered to the winery where it was crushed and destemmed.

Ansonica is characterised by its thick skins and crunchy but juicy flesh, resulting in a more textural wine. When making this wine we lent into that textural component.

We clarified the free run juice and treated in a more traditional style however with the pressings component we ferment on partial solids with the aim of building that texture and complexity. The free run and pressings was then blended back together prior to bottling.
